They can have more than one profession, but in the time of Guild Wars 2 they prefer to excel at one rather than split their skill between multiple as was done in GW1. Certain professions works better for certain races when it comes to lore. Such as Charr disliking Elementalist due to their history with magic and such. Frost59.
Despite not being a fan of engineer I have quite many of them. Two of them are charr, one is asura and the other one is a sylvari (actually concepted as a mechavari/cybervari).Theoretically, every race could be fine with the right background to the character but I'd definitely go with either charr or asura if you're not into creating entire background stories.Hope that helps!

Racials can't be used in PvP so that doesn't matter there. Racial skills are special abilities available to each of the playable races. They can be equipped on the five last slots of the skill bar, depending on their type. If you want to get the most diversity I'd simply try to make 5 male, 4 female (or vice versa) for the 9 chars. Usinge 5 different races for one gender. For the other one

Ultimately, though the charr-human wars were mostly decided by magic. During the first war, humans had it and charr didn't. In the second, charr suddenly had a lot of it while human magic-users had been attrited down during the Guild Wars. Alway female asura on all classes and especially in WvW/PvP, because Female asura is the only one screaming Your dumb, when you die you leave a dumb corps. And that is why fell in love with Asura :D. I wanted this one to be male, but this line is indeed great! Asura.
From your description, I suggest trying Elementalist or Mesmer. Practically, race matters very little. Play around in character creation with each race to see if there's a look that stands out; otherwise, try a character of each for a short while, maybe for five levels or so, to get a feel for their flair and starting areas. 4.
